6 cups Red Potatoes, unpeeled
½ tsp. Garlic Powder
1 tsp. Lemon Juice
1tsp. Curry Powder
½ cup Low-Fat Mayonnaise
½ cup Purple or Sweet Onion, diced (optional)
1 tsp. Celery Seed
1 tsp. Parsley Flakes
2 tsp. Mustard
1 cup Fat-Free Sour Cream
Salt and Black Pepper to Taste
Directions:
Boil unpeeled whole potatoes until tender. Cool and cut into desired size.
Combine remaining ingredients and add to potatoes.
Mix well.
May be served immediately or chilled in refrigerator until ready to serve.
