Low-Fat Potato Salad


6 cups Red Potatoes, unpeeled
½ tsp. Garlic Powder
1 tsp. Lemon Juice
1tsp. Curry Powder
½ cup Low-Fat Mayonnaise
½ cup Purple or Sweet Onion, diced (optional)
1 tsp. Celery Seed
1 tsp. Parsley Flakes
2 tsp. Mustard
1 cup Fat-Free Sour Cream
Salt and Black Pepper to Taste


  • Boil unpeeled whole potatoes until tender. Cool and cut into desired size.
  • Combine remaining ingredients and add to potatoes.
  • Mix well.
  • May be served immediately or chilled in refrigerator until ready to serve.
